ANTALYA PIYAZ (BEAN SALAD) <<< Geri Dön  
 

NAME           : ANTALYA PIYAZ (BEAN SALAD) (SERVES 6)

INGREDIENTS
Main ingredients
 
500 g chandir beans
 
For the dressing
3 tbs boiled white beans
75ml tahini
5-6 cloves garlic – crushed
150ml olive oil
juice of 1 lemon
75ml vinegar
1 tsp salt
200ml water
 
Topping
4 boiled eggs – cut into quarters
3 tomatoes – skinned and diced
6 long green peppers - chopped
4 spring onions – finely chopped
½ bunch parsley - chopped
2 tsp red pepper flakes
1 tsp black pepper
1 tsp salt
 
 
METHOD
  1. Soak the beans in salted water the night before to allow them to swell. Or boil them in salted water for 5 minutes, turn off the heat and allow to soak in the cooking liquid for one hour then pour the liquid away.
  2. Refresh the water, add salt and allow the beans to boil for 20-25 minutes. Again pour away the cooking liquid. Rinse the beans. Bring to the boil again in salted water and allow to simmer until the beans split and are tender. Leave to cool.
 
Preparing the dressing
  1. Take  3 tablespoonfuls of the cooked beans and place in a bowl. Mash with a fork.
  2. Add the remaining dressing ingredients to the bean mash and mix well. This can be done with a hand mixer.
Preparing the salad
  1. Place the remaining cooled beans in an oval dish. Drizzle the dressing over and mix together.
  2. Add the remaining topping ingredients and roughly combine with the beans. Serve.
AUTHOR’S NOTE
  1. In some versions an egg yolk is added to the dressing ingredients.
  2. Black olives can also be added to the salad, if desired.
  3. Instead of spring onions, take an onion, slice it and under running water, scrunch the onion slices in your hand, then dry and use in the salad.
  4. The piyaz recipe above is the Antalya version for home use. Piyaz restaurants all offer similar piyaz dishes which differ in the way the tahini dressing is prepared. Some are more tangy, others more tahini based and so on. The flavour however does not depend greatly on the dressing, but on the type of beans used. Chandir beans (named after the village they are grown) are small but full of flavour, equal to the Simav bean grown in the Aegean.
