
NAME :RED CHICKEN (SERVES 4)

INGREDIENTS
1 whole chicken - cleaned
1 onion
75ml olive oil
1 tbs tomato paste – diluted in 100ml water
1 tbs paprika
4 potatoes - diced
4 long green peppers
5-6 cloves garlic
1 tsp black pepper
½ bunch parsley or basil
1 tsp salt
METHOD

Divide the chicken into bite-size pieces. Place in a pan. Cover the pan and allow to cook on a low heat.

When the chicken juices have reduced add the grated onion and olive oil. Stir-fry for a short while. Add the diluted tomato paste, paprika, diced potatoes, garlic, green peppers and salt. Pour in enough hot water to just cover. Allow to simmer on a medium heat.

When the chicken and potatoes are tender add the black pepper and chopped parsley or basil. Switch off the heat.

Transfer to a serving dish and serve.

Alternatively this dish can be prepared without adding potatoes and green peppers.

Butter can be used instead of olive oil.
